Hot Fries Chicken Over Rice. We adapted a classic New York style halal-cart food, kicking up the flavors with our Hot Fries Rub. (The below recipe is modified from Serious Eats)
Ingredients:
1 lb chicken cubes or tenders
3 tablespoons Hot Fries Rub
2-4 tablespoons canola oil (or any neutral oil)
Instructions:
Whisk together marinade by mixing Hot Fries Rub and oil. Start with two tablespoons of oil and increase until the marinade is a thick liquid
Add chicken to marinade (cook immediately or let it sit in fridge overnight).
Skewer the chicken
Grill over medium high heat (400-500 degrees F), about 4-5 minutes per side until internal temp is 165 degrees F
A quick, easy recipe to get maximal flavor in ground meat.
Ingredients:
1.5 lbs of ground meat (chicken, beef, etc).
2 tablespoons Hot Fries Rub
1/2 onion, finely chopped.
Lime juice (garnish; optional)
Green onions, chopped (garnish; optional)
Directions
Mix ground meat, Hot Fries Rub, and chopped onion.
Form mixture into desired shape (kababs, burger patties, etc).
Grill over medium high heat for roughly 4-5 minutes per side until internal temperature is 165 degrees F. We recommend using a thermometer to check the internal temperature since the color of Hot Fries may make the internal meat look pinkish.
Optional: garnish with green onions and lime juice
We won the 2019 Dallas Eggfest with this recipe, using it to make 40 lbs of chicken tenders for 500 guests. Just mix our Texas Tandoori rub with oil and apply to chicken. Thanks to our flavorful rub, there's no need for a long marinade.
