I saw this recipe on Steve Raichlen's Project Smoke, and I had to try it!!! Although the recipe is a bit involved, the wings had a wonderfully complex flavor - a little sweetness, allot of spice, and a pleasant smokiness from the grill. Uyghur (Muslim Chinese) Lamb Skewers

In the northwest part of China, the ethnically Uyghur people – who are religiously Muslim – have blended flavors from South Asia, the Middle East, and other regions of China. The below recipe (adapted from several recipes found online including this excellent one) results in a savory and spicy lamb that leaves a tingle on your tongue. Peri Peri Garlic Chicken with Teriyaki Glaze

Growing up in the UK and visiting often, I would always end up going to Nando’s.  It is a fantastic South African restaurant chain that specializes in Portuguese-style chicken dishes with various peri-peri marinades.  In the UK, Nando’s sauces and seasonings can be found very easily.  They are also available in the US through Amazon and are now showing up on more store shelves (World Market, Kroger, etc). This recipe uses Nando’s peri-peri salt but I deviated from the traditional peri-peri formula by adding the sweet flavor of teriyaki. I always love the glaze that teriyaki bbq sauces create. Mediterranean Chicken Kabobs: Shish Taouk

Shish Taouk is a traditional chicken kabob best cooked on the grill. This dish – served at nearly every Middle Eastern/Mediterranean restaurant – has a lemony-garlic punch, pairing well with smokey flavors from the grill. Smoked Deli Beef

In my quest to minimize consumption of processed foods that contain added nitrates and preservatives, I discovered making smoked deli beef at home. It is possibly one of the easiest things you can do, even for people who are new to smoking. It takes minimal preparation and has relatively quick cooking times. The end result is delicious, tender deli thin slices of smoked beef. Ingredients Eye of Round – 5lb.
