Mandi is a traditional dish - originating in Yemen - made of slow-cooked meat seasoned with a blend of dry-roasted spices. In Yemen, a hole is dug in the ground, filled with hot coals, and meat placed inside. This mandi pit is then covered with sand and the meat cooks for several hours until it becomes fall-apart tender.
On our trips to India, we discovered regional variants of Mandi in South Asia (likely related to Yemenis who settled in India centuries ago), prompting us to create a Mandi rub that can be used on a variety of meat (lamb, goat, chicken, beef, or even camel). Our versatile Mandi rub can be used with either low and slow Texas style BBQ or hot and fast direct heat grilling.
